Renewed and renovated Bionbo: An excellent gastronomic adventure

Renowned Catalan chef Xavier Aguado has recently redefined the essence of his acclaimed restaurant, Bionbo, located just outside the historic heart of Girona. Elevating the already exceptional culinary experience, Aguado has transformed Bionbo into a gastronomic adventure.

Chef, teacher, presenter,and author Xavier Aguado, armed with a load of creativity and a sense of innovation, has steered Bionbo towards a fresh and inspiring direction. Despite the restaurant’s prior success as an affordable yet exceptional dining spot, Aguado has decided to follow his passion and breathe new life into Bionbo to realize his culinary dreams.

The evolution, that was finalized earlier this year, unfolds with three distinct concepts, Aguado explains: Bionbo Gastro, Bionbo Taller, and Bionbo Mercat. In the ‘Mercat’ experience participants embark on a journey to the local market, selecting fresh ingredients to cook alongside the seasoned chef before indulging in a delightful dinner. ‘Taller’ is all about immersive cooking classes, while ‘Gastro’ represents a captivating fusion of theater, an escape room, and a culinary experience. Aguado introduces a different theme every three months, engaging participants in an enjoyable competition where the right answers lead to little rewards at the end of the night.

‘Bionbo 2.0’ is also a new, perfect location for events like small concerts, comedy, theater and presentations of books and products. Relocated slightly closer to the old town, around 100 meters from its previous location, Bionbo now resides in a beautifully renovated space adorned with art on the walls.

Notably, guests can enjoy a customized six-course menu tailored to their dietary preferences. Aguado, an author specializing in probiotics, skillfully adapts courses for vegetarians, vegans, those with gluten or lactose intolerances, or any other dietary requirement previously communicated in advance.

“I aim to bring Catalan cuisine closer to the people as I strongly believe it’s one of the greatest in the world,” Aguado, who has traveled the world pursuing his passion, shares after the show. He demonstrates bringing the people closer to the dishes by creating awareness with each bite, by asking questions or playing little games. This experience is heightened when shared with others, ensuring an enjoyable and educational culinary night.
